As I said unraid is a commercial solution that makes this sort of thing a lot easier (with graphical setup etc) and you can find a few tutorials including some from LTT on youtube.

 

VMWare ESXi should also do the job if you prefer.

You can use virtualization. You may need to use pcie passthrough if you want to have a dedicated network card for pfsense. This can be done on any linux distribution if you know what you're doing, or more easily on a commercial solution like unraid. Alternatively you can use a hypervisor like xen, but xen is expensive.

You don't need Windows Server for that.

I suggest you learn linux. It is really good for servers because it doesnt have any GUI (this way you dont have to waste resources on rendering the GUI). Most of the servers run linux and there is a lot of guides on the internet for it. You can look on DigitalOcean they have great guides.

Just as the main router. I had one before but it died. I Was going to use it for VPN so I could go outside the network still use my networks shares.

well i havent a clue how pcie passthrough works with it boot have a go, see how far you get (btw freenas doesn't like being virtulized)
