Personally, what I do is tons of things with my servers (both though Azure and my own.) I have many different ones with different tasks. For example, one is a media server using Plex. I can then access my movies and TV shows anywhere from a reliable server. Another is as a VPN using OpenVPN or some other variant. I also have a phone server using 3CX and a IP Phone I bought off of Amazon. You could also use IIS to build a web server. Lastly, I suppose you could run Adobe Creative Cloud on it, not the best, but it works.
