You can press Alt+Z to access the menu in-game. The Icon may be greyed out if you don't have enough storage space on whatever drive you have selected as the default for Nvidia Share to record to. Try changing the file that you want your recordings to be saved to by default.

You will also be unable to change settings while shadowplay is running/ you are already recording.

I have the space. Maybe the drive is "offline" and so it doesn't show.

It happens to me from time to time. It could be because the drive is 'busy' like you said.
