I have an HDD that is running in ACHI, and I just bought two PNY 240gb SSD to run in raid 0. When I go to set up raid 0, it says that it will reformat my HDD to raid also, and I will lose everything on it.

Can I run the two SSD in raid 0, while still running the HDD in ACHI?

 

If it matters my PC specs are:

Asus Maximus VIII Hero

Intel i7-7700k

4x4gb sticks of gskill trident z ram

Corsair H100i Liquid Cooler

Corsair AX860 Power Supply

If you want a faster ssd, get a pcie one, raid 0 won't be much faster.

Raid 0 with the SSDs will be much faster then an HDD. I already have the SSDs, so I don't want to spend any more. If I go ahead and set them up in raid 0, how will I get my HDD data back onto them(operating system, etc...)

you can make a raid0 with just the hdd to use it.
