If you can afford it go for it. But for more storage the 500gb ssd and a 2 or 4 tb hdd will be better.

New to this all building stuff, but I can try and offer advice, since I did try my best at researching for my PC Build.

I thought majority of PC gamers only need an i5 CPU for gaming, etc. (ignore this line if your actually needing the i7 hyperthreading.

I'd definitely lower the size of your Power Supply, unless your actually needing that much power (which it doesn't look like you are), and are basically going to waste money.

You should be able to find a cheaper 1080 than the 1 you have listed (unless you have solid reasoning for the 1 you chose).

For Storage, I'd go w/ 1 SSD (boot/game storage) and as mentioned, a 2 or 4TB HDD as your storage.
