Power?

You don't have to unplug, you just have to turn it off. Look in your BIOS for 'USB Charging' and other similar sounding features - USB charging powers the ports even when the PC is not in use. 

I completed my build during Christmas, and on pcpartpicker.com it draws 356W, which I know is a lot. The PC itself was already expensive enough so I've been very cautious with that number, trying not to let it run while I'm away to save as much as possible. When I do shut it down, though, I notice the gpu power light (at least thats what I assume it is) is still on, and if I tap my keyboard, it lights up and doesn't turn off. Due to this, I have started hitting the switch on the power supply and unplugging the pc whenever I'm done with it. Is this necessary? (I know am being very stringent with it)

Eh, not nessacary. USB ports might stay powered depending on your motherboard when you shut your computer off, so you can charge your phone and that stuff. Your call.
