How long will the GTX 1070 be viable for 1440p?

Derived from the lifespan of the GTX 470. Get a 1080 Ti if you can afford to wait until Pax East, which is probably when it'll be launched. If you can't wait, get a 1080 now.

I think you mean a 6800k, and it isn't much faster. If you do mean a 6900k, it's faster owing to its two more cores and four more threads, but it costs more than thrice as much at $1100.

 

A 1080 Ti will probably cost $700 to $750, judging by the price difference between the 780 and 780 Ti, and the difference between the 980 and 980 Ti.

You should be fine for more than five years at 1080p, though. Right now, the 1070 is the go-to 1080p 144Hz card, which means it'll probably run future games at 1080p 60Hz for years. However, you must also keep in mind that GPU technology is improving faster than ever before. That means cards will be antiquated more quickly. The GTX 480 is seven years old, and can still game at 1080p. However, a GTX 1080 will probably not last as long, given generational improvements in GPU technology are bigger now and will continue to grow.

I will try to run it at 1440p, for about 3-4 years before I add another one. I don't really mind cranking down the settings. Thanks for all of your help everyone!

There is no way to know. 

Most likely you will be trading visual fidelity for fps up to a point where you choose to change your GPU. 

I have a 1070 + 5820K and i already trade Antialiasing in many 2016 AAA games to keep 60 to 100 fps. Some of them let me set MSAA x2, some TXAA, others FXAA (which i prefer not to turn on at all). Ngreedia Crapworks disabled by default and sometimes (ROTTR) knocking a notch Ambient oclussion from VXAO to HBAO+. 

In one year probably, more features may have to be given up... it all depends on how much you want to give. Some options are prohibitive, like Witcher 2 Supersampling antialiasing on level 3. (tried and gave me 20 to 40 fps in a 6 years old game FML).
