I'm shopping for a new SSD, and I was just going to get a Samsung 960 Pro 512GB, but would U.2 be competitive? I think M.2 has the advantage of being on the motherboard hidden away and not taking up space, but is there any advantage to U.2? I really don't know much about it, other than I mistook it for SAS at one point.

just go for the 960 pro its a simpler connector

afaik there are only intel u.2 drives

yeah, that was my thought, I used it a little bit on a pretty new server I was minding while my friend was doing some DIY work but it looks kinda cludgey compared to M.2

m.2 is simpler, just slot it into the m.2 slot and boom(not explosion) your good to go, but it appears you need an adapter for the u.2(intel 750 pro) and the samsung is faster overall

Yes, I saw the adapter being used and was like "OHHH THAT'S HOW" and then thought how dumb it was.
