Need help on setting up remote machine server

Hi all. I have been a part of a project that has been building setup for a local engineering firm and I have hit a roadblock and was hoping somebody here could provide some insight.

 

So the basis of the rig is that we have a Raspberry Pi that is connected to a testing machine for this firm. The Pi would be collecting the data as well as being connected to a webcam. The Pi needs to be able to then be accessed remotely via desktop to collect and process data at the boss's computer. That was all well and good, set up a simple VNC server, use luvcviewer to see the live stream, and all the other data is accessible. 

 

Now our problem is networking. The client wishes to be able to access this machine both at his house and on his phone in, say, New York City. We are having issues setting up simple things such as port forwarding with the router, the machine is overheating, and VNC is clunky at best on the iPhone. Is there a way, without using VNC, to make this setup possible with the resources we have? Thanks to any who can help :)

VPN is probably a better idea than port forwarding. 

 

You could also probably put a small webserver on it and use a web interface.

Teamviewer perhaps?
