Overkill with the RAM, 16gbs is enough, also a great air cooling would be enough just as much, a single GTX 1080 can't keep 60fps on every game though, Titan X might be required but for 1440p yes that is the dream build.

But since you need Z170 for SLI anyway might as well do an i5-6400 in there and BCLK OC it.
