850W should be enough for two 1080s so 1000W should really be more than enough. It depends on what you use it for but I would get for about the same money the 5820k and the Asus X99 Strix motherboard, because this Combo would mean a lot more CPU power. And I guess you really need a M.2 SSD, cause you are of Course a Video editor and not a gamer, who wouldn't see barely any benefits from such a SSD.

And og 1000w watts is more then enough is this a good choose ?

EVGA SuperNOVA 1000 G2, 1000W PSU

Yes that should be fine.

So here is my part Suggestion for a very high end gaming PC:

i7 5820k (5930k, 6800k and 6850k are other viable options)

Asus ROG Strix X99 Gaming

2x GTX 1080s or a Titan XP (or 2 Titans if you want to throw Money out of the window)

Any PSU above 900W

Almost any 240mm AiO-Cooler

500GB SSD, Intel and Samsung are my favorites (M.2 only if you need that 2 seconds less loading time)

any 2-6TB HDD (I prefer WD Black)

16 or 32 GB of Ram (16 is more than enough but if you want you can get 32)

i5 6500 @3.2Ghz, Zotac GTX 1080 Ti Mini, 16GB DDR4 @2400Mhz, 240GB SSD, 1TB HDD, Corsair Vengance 650W, Asus Z170 Pro Gaming, Thermaltake Versa U21, Hyper 103

AOC Agon AG271UG 27" 4k G-Sync, G933, G502, G801

Is the older gen CPU and chipset better for Gaming ?

I just se so Many use 6700k and a Z170 motherboard

The older Chipset and the CPUs are part of Intel's extreme series, they are more expensive but a lot better.

Almost noone uses X99 just cause it is very expensive, but for me it would be the only choice for a super high end gaming rig.

If I was you I would wait for Zen, cause Zen might match the performence of a 6900k for a lot less money.

Zen or Ryzen is the new wave of high end CPUs by AMD that will come out in the spring of 2017.

And a short question, if it isn't too personal: From where are you, cause you don't seem as if you would be from any english speaking cuntry.

Kaby Lake from Intel will just be a Skylake refresh, so the new Intel series is nothing to be excited about. And they will release really soon but in my opinion you should wait for Zen or Skylake-E by Intel if you can't live with an AMD processor in your build. But the Prices for many CPUs by Intel will likely drop when Zen releases so I can only advise you to wait, even if you want to buy Intel.
