The compatibility page on g.skill is a bit weird in terms of being direct so it is a bit unclear to me.

Is the ram speed (2400 MHz,3000mhz) the only thing that determines if it is compatible with my motherboard or not besides ddr4 vs ddr3/2 and so forth?

What determines compatibility is the RAM type (DDR4, DDR3, etc)

Speed only matters like this (for the most part): ALL SPEEDS will run at the default speed (2133 for DDR4) regardless of what the box says for the RAM kit unless you can overclock the RAM on your motherboard  (Z or X series chipset for Intel)

Main Rig: R9 5950X @ PBO, RTX 3090, 64 GB DDR4 3666, InWin 101, Full Hardline Watercooling

Server: R7 1700X @ 4.0 GHz, GTX 1080 Ti, 32GB DDR4 3000, Cooler Master NR200P, Full Soft Watercooling

LAN Rig: R5 3600X @ PBO, RTX 2070, 32 GB DDR4 3200, Dan Case A4-SFV V4, 120mm AIO for the CPU

HTPC: i7-7700K @ 4.6 GHz, GTX 1050 Ti, 16 GB DDR4 3200, AliExpress K39, IS-47K Cooler

Router: R3 2200G @ stock, 4GB DDR4 2400, what are cases, stock cooler

I don't have a problem...

So if I'm using the z170 gaming m5 by MSI then all I need is ddr4 ram with whatever desired speed it says it can use which is 2133 and the other specific ones that will let me over clock to so I could use any 2800mhz?

Any speed will work. Of course if you don't plan on overclocking anything at all, stick to around 2133mhz to save a few bucks.
