About how cool will a 6700k and gtx 1070 run with a single 360mm rad (about 45mm thickness)

It will be able to sustain both of those even overclocked but may not be dead silent when at full load, adding some more rad space such as an extra 240mm would help in terms of noise.

«Not dead silent»

Does that mean kinda noisy

Not noise but you will definitely hear the airflow from the fans, to give you an idea I run a 360mm (60mm) and 240mm (45mm) rad with fairly heavy overclocks and at full load it is inaudible sitting <2 feet away. That being said my RPM's and rads are designed for low speed operation, where everything never goes above 700RPM.

I would vote to just keep the Overclocks a little lower to reduce heat and noise. But if you want max performance pick up the best rad fans you can and get ready for the leafblower (Not really but still)
