If built specifically for workstation work, I'm surprised it's not a X99 build, or has more RAM.

Are you by a Microcenter, they typically have X99 boards on clearance at 160ish, and entry level 6-cores at 310ish, which would be about the same price as your Z170 combo.

Tell me, why X99 over Z170? Can it overclock?

More cores, More RAM Channels, More PCI lanes.

 - Get more Ram if its going to be a workstation

 - Get a different cooler maybe, it depends if you are overclocking i guess

 - EVGA G2 or GS. Im not sure how the g3 is

 - Add an SSD and maybe more storage

What should I look at when deciding what Ram to use? Brandwise. Isnt the 6700k limited to 2133mhz?

Yes, it is, but that's the cheapest 2x 8 GB black stick of RAM on PCPartPicker.
