1: Which CPU has the absolute highest single core performance for gaming right now?

2: How does hyper threading affect video games? Any difference playing a game on let's say i5 6600k (no HT) vs i3 6100k / 6700k (has HT)?

Main:  1650 v2   @ 4,6GHz   -   X79 Deluxe                -   GTX 1080 @ 2000MHz   -   24GB DDR3 @ 2400MHz / CL10

Side:   i7-4790K @ 4,5GHz   -   Maximus 7 Hero        -   GTX 1070 @ 2114MHz    -  16GB DDR3 @ 2666MHz / CL12

1 : This is near impossible to quantify, but for Skylake, id say 6800K

2 : Hyperthreading is useless in games. For any gaming whatsoever, id recommend a 6600K at max

1) 6600/6700k oc'd as high as possible.

 

2) some games show a benefit, mostly newer games like fallout 4, most games don't, however we will start seeing more and more games take advantage of it.

The 6800k is Broadwell, Skylake has a slight edge on it in single core clock for clock and would oc higher due to lower core counts.

 

And ht is no longer useless, not required for a good experience but not totally useless like you claim. It is recent, and few games show a benefit, but it is still there and well only continue to rise.

Wouldn't an I5 6600k bottleneck a GTX 1070 though?

Depends on the game and the settings. You asked about highest single core performance, there is no difference between the single core performance of an i5 6600k and an i7 6700k at the same clockspeed.
