Would say a screen recorder that also records the audiostream should be good? Pretty sure that in any voice program you have a option to record a conversation. Did it in the past with teamspeak.

Should be fairly simple. Point OBS' audio recording under devices under Audio in Settings to the sound the call is coming through. i.e. if it's headphones, point it at the headphones. 

That should be it honestly.

m8,either select the skype window to be recorded,or the whole desktop,or a screen region with skype in it
