Racing Sim, Quick Release Bolts?

Hey there, so soon (around Christmas) I plan to build my own racing sim (would you like me to do a thread of the build process as well?) 

 

Now the reason I plan to build my own is because I can't find something that fits my needs for my price range for the seat and structure, the main two I was look at was the Playseat Evolution and the Obutto Ozone, however, the Ozone is out of my price range, and the Evolution apparently has wobble issues with heavy wheels and the centre post can block heel toe techniques an make left foot braking hard, so nope, both out of the question.

 

So, anyway, I plan to add all of the follow possible adjustments for the rig (foot pedal distance and rotation. Wheel distance, height and rotation. Gearshifter distance and height. Seat Slide and lean.)

Now, I've already planned each of the adjustment methods and they all mainly rely on staggered bolting patterns (see picture below) now, every time I want to adjust for a different person using the rig, I really don't want to have to undo X- Amount of bolts, so I was wondering, if anyone has any suggestions on how to make or where to buy quick release bolting solutions? (The bolt needs to be able to completely come out)
