1TB or 2TB HDD? & What Brand?

Well, the one you go for depends on how much space you need. We can't really help with the size without knowing more. 

 

As for brand, things like the Seagate Barracuda and WD Blue drives are good options at a decent price.

Ok So 2TB WD Blue Good As It Is Cheapest In Australia :P Around $80 AUD so like $60-65 USD :P

That depends on you. I've seen some people do fine with 1TB and I've seen some people wanting 8TB HDDs because they've completely maxed out their 5TB WD Blacks.

 

As far as brand goes, the WD Blues and Seagate Barracudas are good go-to drives. If you're wanting something a bit faster and more reliable (w/ a 5 year warranty) the WD Black is available at a premium.

That's actually a good price... I've only seen 2TB HDDs go for $100 AUD...

850 EVO. Performance is similar but the 850 EVO offers longer durability.
