rightclick on any .mp3 file - propertys -> on the first tab, third from the top it says "open with:" - change to w/e program is knowen to work with it and it will apply to all .mp3 files from now on and hence should take care of that issue.

 

Or, if you use VLC, you can actually choose what files extensions should automatically be assosiated with VLC, somewhere in the options. So if you have a bunch of different files types, the manual approach on doing that for every single different file-type may gets oughtweighted by the automatic one.
