Hey,

On my laptop I have used about 380gb of my hdd. Should I get a big ssd like Kingston or adata 480gbs or a Samsung 750evo 120gb + 1TB WD Blue?

get a Samsung 850 Evo 500gb IMO.

In regular use, the speed of SSD doesn't matter that much. All are fast enough for use. And higher capacity drives are usually faster than lower capacity ones. I would personally go for the 480 GB SSDs.
