my system specs are below going to 1440p would a single 980 cut it for 1440 or should I sli it I know a 1070 would be better because no sli problems but it's to much money

single 980 should be sufficient to play nearly all games on high settings at 1440p for the foreseeable future.

You COULD run into some VRAM limitations on some games going forward. But realistically a 980 will do well for 1440p. You may just have to turn down one or two settings on one or two games here and there in order to stay in that VRAM buffer.
