I would say a 29 inch ultra wide if you can i have the 1080p version and I love it but I'm not sure about the room you'll have vertically and the 25 inch.

I'm too worried about the vertical space, as most of the games that i will play require more horizontal space

Could've saved a tiny bit on the PSU by going with a 550W one (you can run 1070 SLI on a 750W PSU).

The PC is good, the monitor.... holy crap... 25" ultra wide... that is small.

 

Go to some stores and look at them up close.  I would not want that small (vertically) a screen.
