1 big or 2 small (ram)

I am trying to decide whether to get 1 stick or 8gb or 2 sticks of 4 

Note: I will be upgrading to 16 gb 2x8 or 4x4

if youre upgrading to 2x8 then might as well just buy the 1x8 now, so if you want to upgrade to 32 later you still have 2 slots (unless you have an 8 slot board)

Thats what I was think I just wasn't sure tho

You won't get dual channel without two identical sticks. You probably won't need it either but dual channel is the reason two sticks is recommended in the first place. One other thing is redundancy, but if you need to RMA a failed stick, you usually have to RMA the whole kit so it really doesn't matter either.
