I currently have a AMD based pc. With a AMD 8350 fx, Asus crosshair v formula z, Asus r9 290x matrix (not platinum) and a overkill of 32gb Kingston hyper x ddr3 2400mhz (running at 1866 mhz).

I am thinking about building my first Intel and nvidia based pc. I have decided to go for a Asus gtx 1080 strix with a matching Asus strix motherboard. But I am not sure which cpu to go for ?

I was thinking about getting a i7 6700k but I have heard that I5's are as good if not better for gaming. But then there is the i7 6800k which looks good for the price. I am ruling out anything between the i7 6850 to 6900 because of the price.

Which cpu do you recommend as the pc will mainly be used for gaming at the highest end as possible with a approx £450 price sealing for the cpu ?

A 6600K or a 6700K would be the best choice. The Broadwell-E line-up is only as good if not worse than the 6700K for gaming. With the 6600K, you could also save some money and put it to something else.

6600K if you only game and rarely edit and need to save up. 6700K if you edit and have the cash. Avoid the 6800K unless you edit and stream very regularly.
