Ok, i recently invested in a new pc to replace my dinosaur Phenom 2 processor pc, I'm looking for any and all set-up/overclocking guides for an X99A motherboard with a core I7 6800k processor. I am getting a used 8800gtx VC, but i plan to upgrade to 2 RX 480's assuming the PCIE power draw is solved by third party vendors otherwise any budget friendly card suggestions are welcomed. Also, i bought an 850 evo (1TB) to run in raid 0, which i have no idea how to set up, so any pointers there would be greatly appreciated. Im new to PC building, so try and dumb it down for me a bit. Thank you in advance.

Your need 2 drives to run raid 0 and you shouldn't run raid 0. A single ssd is plenty quick. I'd suggest investing in a more powerful single card solution, dual card requires developer support which historically has not been great.
