It will use DDR4, and will likely have a new socket. 1151 should end with Kaby Lake.
Don't bet on an upgrade path to Cannonlake with that socket until Intel confirms it.

Moving to a smaller architecture(10nm), means moving to a new socket. 

Okay then, do you think I will at least be able to use an 1151 cooler with the new socket? Something like a darkrock pro 3

All of the 115X sockets have the same mounting holes.

(I edited my first comment to reflect some capriciousness, it's still up in the air if the socket will change)

Regarding darkrock pro 3, I can't say for certain, but the odds of Intel changing the socket enough to make current air cooling obsolete would be a mistake.
A large cooler like that will probably just come down to the size of your motherboard, the height of your DIMMs, and the space in your case.

Don't worry about the socket.
