Is it an old phone? Older phones tend to run out of memory, force killing the youtube app as result.
If that happends, upgrading would be the best solution ;)

No, it's a Galaxy S6 with Android 6.0.1.

Have you tried reinstalling the Youtube app?

Yes. Remove all of the Youtube data and empty the cache and then disable it in settings and reinstall the app.
