It's not an um common thing with the Bitspower fittings they seems to have a bigger interference fit with the tubing than with some of the others out there. 

I believe they should, Did you get the correct OD on your tubes to match your fittings? That would be my first guess why its not tightening down.

Would those happen to be bitspowers fittings? Measure the tubing with a pair of calipers to ensure they are exactly the specified size if they are it's not uncommon for this to happen you can try dipping the tubing ends in hot water to soften them to put over the barb and tighten them down as far as you can.

You were right, the OD was slightly bigger. Good job! I'll try dipping it in hot water and see where that gets me

The tubing can vary a little during manufacturing but try using the hot water method to see if it helps if not you might need to get some more tubing and hopefully it is not from the same batch that is slightly oversized.

Ok so sadly, the hot water didn't work. I'll try a little more but thanks anyway
