Chess analyse? Never ever have I heard of that before...but if you're getting haswell-e then I recommend for you to wait like a few weeks for Broadwell-e as they do offer the better IPC you see with Haswell>Skylake :)  (but obviously not as much but still)

yes for  chess analyse and for  chess engine match. fritz 15 , infinitychess and many other

   it is major how many ghz you have....  I heard about water cooler H100i extreme perfomance is still the strongest it is true?  and  what differences  between air cooler and water cooler?

Water cooling will allow for higher overclocks because it can keep the chip cooler, and more GHz depends on whether or not you are talking about the chip in relation chips of the same architecture. Cpu speed is GHz * IPC to get the total amount of instructions or the faster chip.
