It's a digital back on a Swiss Alpa camera, the Alpa cameras do not have electronic control.  The lens system is pure manual, like other medium/large format film cameras, so obviously they are fiddly.  I once considered buying an Alpa.  Alpa cameras, like old school large format cameras, are pretty modular.  He seems to be using an Alpa 12 TC in the video.

The Phase One digital backs are medium format.  Medium format digital sensors tend to have more megapixels than any of the smaller sensor sizes, including 35mm full frame.  They also cost a lot more.  The cheapest medium format digital camera might be the Pentax 645 series.

 

Even digital cameras can be fiddly, if you think about it.  Except we don't think about it because we use the camera's menu and press a few buttons or turn a dial or two to change settings.  The lens on that Alpa, he is selecting the shutter speed, aperture and focusing distance.  Just like you do on any DSLR in pure manual mode.
