what cooler do i need?

based on your theme, i recommend Dark Rock 3 if you wanna use air cooler

or H100i GTX or kraken X61 if you wanna water cool (though im not sure if the front supports rad, the nzxt website is so unclear)

-sigh- feeling like I'm being too negative lately

That S340 is really nice imo. Cases are mainly personal preference so we can't really choose for you.

As for the cooler, Cooler Master Hyper 212 Evo if on air or if you want to go down the water route, I would suggest the Cooler Master Nepton 240M, I have one and it cools my CPU to about 30 degrees at idle as well as being super quiet

i5 6600K @ 4.4GHz / Cooler Master Nepton 240M (GC Extreme Thermal Compound) / Asus Maximus VIII Gene / 8GB Corsair Vengeance LPX DDR4-2400 / 240GB SanDisk SSD Plus & 2TB SeaGate Barracuda HDD / EVGA GTX 980 ACX 2.0 / XFX XTR 750W 80+ Gold  / Fractal Design Node 804                                                                                                                                                                                                                      Total: £1042.31

first thing's first: go for a WD hard drive, better fail rate over the seagate one.

also thought, why not get yourself a RGB keyboard or mouse so you can have matching colors? (Or both RGB so they can be red.)
