If you have five 4tb drives in RAIDZ2 then you would only have 12TB of effective storage, so yes. 

When setting up multiple drives under RAIDZ2 or RAIDZ3 do I need an additional two or three drives on top of my storage like you would on a typical standard hardware raid setup or am I completely overthinking this?

Okay so 5x4tb = 20TB minus 2x4TB for backup, So three would equal 8TB of space in the same configuration?
