Need Help: Restoring WindowsImageBackup to VM?

Yesterday I reinstalled Windows 10 on my PC (I was having several seemingly unsolvable issues I did not want to mess around with), making sure I had a recent system backup.

Unfortunately, I forgot to make a backup of my Windows Store Apps. Long story short, I need to boot to that backup again, there is no way around it.

 

But I do not really want to make a new backup, restore the old one, backup Store Apps, and then restore the new backup, if there is any other way.

Instead, I would like to restore the backup to a VM, but I am not experienced enough with VMs to know how to do that.

Does anyone know how to do this with the system image (VHDs)?

Keep in mind, I am running Windows in UEFI mode, so there are 3 virtual hard disk files.
