Thickness does help but is marginal compared to longer rads and cheaper, where you can have a 60mm thick 240mm rad a 30mm thick 360mm will out perform it. The difference a thick rad makes is usually only at most 5C at load to a thin one, there are other factors also like FPI (fins per inch).

How thick should I get my radiators?

x2 240mm

x1 120mm or 140mm

I was thinking about 30 mm or do I need thicker.

there is very little temp difference with thickness

its much more effective to get larger radiators or more of them

They make the thick Rads because some cases only hold say a 240mm Rad. But it can be as thick as it wants to be. So it's another way to have more surface area when length is an issue.
