Plug it in then start up the computer. There should be a button it will tell you to press to get into the boot menu. Press that. If you miss it and it posts before you can hit the button, turn it off and repeat. Once you're in the boot menu, select your flash drive and you're good to go.

Normal will be fine, but do custom if you want to..well...customize it. Such as disabling Microsoft spying on you and whatnot.

Don't worry about the other partitions you see, just select your SSD to install on.
