XBOX to Emulator/HTPC

So I recently went to my local Goodwill and found that they have a lot of broken XBOX for $5 and XBOX 360 for $10 and seeing as how I got a little sad to see a broken XBOX that probably wouldn't be used again I decided to buy it and bring new life to it by turning it into my living rooms HTPC. I've already prepped it but the only thing that I can't decide on is what kind of motherboard and CPU to go with. As much as I'd love to go with Intel I feel as if an APU would be much better for this kind of build. I know that I'll have to go with an mitx motherboard but I'd love to get some input for the CPU/APU.

A APU would be great. Just get speedy RAM for the APU.

I was thinking of getting a 7850K with 2133 RAM since it sounds like the best option for me right now. The 7870K isn't really worth it for me and the most gaming that I'd be doing is maybe a PS2/PSP emulator and just watching Netflix and such. The only thing that I can't decide on is the motherboard now.
