Custom cable extensions

You may need to break out the soldering iron and crimpers to hookup the extra connections but for bare supplies Icemodz or Lutro0customs  is a good option for things like theses:

Does it matter what type of wire you use to make said extensions? As in, do I have to worry about things like rated current or whatever or am I overthinking it? Also, this may sound really stupid but could you wire a 24 pin and an 8 pin EPS using the connections you need from each? Like a 12V from the EPS to fill in a gap in the connection you need.

If you want to make your own custom extensions for the wiring as long as it is 18AWG which is the standard it wouldn't be an issue, some like to use larger diameter 16AWG which is also an option but not absolutely necessary. 

As for filling in the gap I'm not too sure what your referring to.

The motherboard uses a proprietary pinout and finding a PSU for that is very hard, therefore I'd like to get a normal PSU but since the pinouts are different the 20+4 pin connector on the PSUs doesn't have all the connections on that cable, therefore I'd like to also use the 4+4 pin EPS to get the other connections.

Oh that's a very specific case then, theoretically you can rearrange pins to get the correct pinout on the motherboard side but after making the cables I would for sure use a multi-meter to probe all your connections to double check nothing got mixed up when making the extensions/adapters. Is this for a server board or older hardware it's not too common to see proprietary pinouts for 20/24pin connector.   

 

It looks like you will need to split certain connections or get extra ones from say PCI-E to get that many 12V lines however since the standard 24 pin doesn't have that many:
