I don't think there's a surefire way without testing it, but if you see bubbled/bulging capacitors, that should be a giveaway.

Why would you risk buying a GPU that might have been baked in an oven? Unless your getting it for super cheap or using it for another miscellaneous reason I don't know if its a smart move honestly.

The first thing I would look for is drug paraphernalia like rolling papers, bongs, vaps, etc.  If you don't find any of that you could always ask for a urine sample to make sure that it was never baked before.  If all else fails, ask if you can join next time and chances are, if it was baked at one point or another, it'll let you join in and now you know. :D
