That would be a great editing computer. Though, I don't think you need 64GB of RAM. If you have the money, there's nothing I'd change.

You could change for a 5920k and 32GB ram.

Yeah, you will not reach more than 32GB, just with multiple virtual machines.

I don't think you need 64GB. 32GB would be fine. Maybe somebody else here knows better than me, I'd wait for other people to reply.

2 monitors is technically more room, but if you have some intent on gaming (which it appears you do) I'd get an ultrawide.

It heavily depends on what is available, and I don't really know any good shopping websites for your country.
