Is it possible to access appdata from a backup?

What's up guys,

I backed up my laptop before I sent it into RMA. I backed it up by just dragging everything off the SSD and HDD onto a 1Tb external drive. Probably should've used an actual backup program but I was short on time. Anyway is there a way to access appdata off the drives because I want to find a save from a game... Thanks for the help in advance.
