Building a HomeServer/Plex Serve/NAS

I am highly considering building a home server. My needs/useage of it would be:

Rip and backup my 400+ DVDs and 30-50 BluRays for use with PLEX

Act as backup for my pictures/documents etc from my PC.

Act as a backup Pictures/Documents etc from my wife's Mac.

 

MAYBE: Act as a home base git repository for some dev work that I do. 


I am trying to figure out the smallest footprint system that will have the capacity and ability to suit my needs and for the best price. I don't want to build so light that I can't upgrade in the future but on the same token I don't want 100TB of storage if I only need 10TB. 

Anybody care the chime in with thoughts?

 

I know I am really thinking about unRAID as it seems to have everything I need and looks to scale well when I decide I want to add a new feature.
