The rads he used has multiple ports so he used one of the extra ports, if you don't have that option you can always get a T splitter to add in a drain valve.

Use a T-joint.

His radiators have four holes, he's just using one of the spares.

so if I will buy this: http://www.performance-pcs.com/new-xspc-ex240-multiport-series-copper-dual-fan-radiator.html

I just put another comp in a spare hole and connect to this the tube with a barb and stop fitting?

and I need to buy stop fittings for the holes I don't use?

The extra holes should always come with stop fittings from the factory, but yes you would add an extra length of tube the one of the extra ports, a slightly more elegant way is to use a valve instead of just a stopper. You can add a piece of hose to that when you drain the loop:
