Just use the HDD with the new system. Its simpler and quicker, unless you get a SSD, in which case, install windows on the SSD before copying all files

Since you are reusing your drive on a new build you would need to do a fresh install of the OS and all the applications and games with it. This is because of the new drivers required for the new hardware and with the new OS comes new registry which is the reason for reinstalling the applications and the games. :) The rest of the data should still be visible (music, photos, media, data, etc.). I would suggest backing up your boot partition to the others and when you plug the drive in the new build, start the OS installer and format just the old boot partition with it and install the new OS there. This should keep the rest of the partitions safe. :)
 
One more note from me: Since you are reusing an old drive on a new build I would strongly recommend running a diagnostic check and see if the drive is still safe to store your data. A tool from the manufacturer should suffice. :)
