Gaming. Will I miss out on any performance without the two extra cores?

No since most games only use 1 or 2 cores so the 4790K will be best and the 6700K while has better performance has stutter with PCIe based GPUs (pretty much all of them) so yeah go with the 4790K.

Skylake stutters with graphics cards which makes Haswell still the better option lol.

In gaming? You'll lose performance with the lower clock speed of the 5820K.

Okay now which Mobo should I get?

I prefer ASUS WS boards, mainly for the reason for BIOS flashing incase if anything goes wrong, and buttons instead of jumping the board for things like clearing CMOS, they might not be as available now because of skylake over coming haswell so it might be a harder find but they are amazing boards

Those are really expensive. I was leaning towards asus. What should I be looking for in the features of the Mobo?

That's just what I prefer. I would still definitely recommend looking for buttons instead of jumpers/jumping pins on the board. Even if it's not a WS board. And for me BIOS flash is a must in case of any errors because I don't have spare processors laying around compatible on every socket and architecture and for every BIOS version. It can be extremely helpful. As well as a chipset of particular choice also very important. Some chipsets allow overclocking, others don't so that's another thing to look for.
