Best storage solution for $150?

I'm saving up cash for some space for a few games (prefer 500GB capacity).

 

Anyways, I was thinking of getting a Samsung 850 Evo 500GB M.2 till I heard RAID 0 performs better supposedly (I haven't done any research in RAID arrays at all, thus, I'm here).

Now I'm contemplating two Samsung 850 EVO 250GB SSDs in RAID 0. So, is it reliable and does the storage per SSD add up? I can get two for $150, right where I'm aiming at.
