Windows 10 help

So I have W10 Pro (so it shouldn't be restarting with EVERY update) and I have it set to don't sleep don't turn off hard drives etc...etc...and I would like to run it always on (media server...etc) but the machine seems to be constantly sleeping and not coming back out and other annoyances....what am I missing?  And how do I fix it?
