you need to make seams and then unwrap it

depending on your needs you can mark seams but that depends heavily on your textures you are using

if you use e.g. texture paint, i'd go without marking seams

I also need to know, How do i Separate Polygons into there own separate Meshes 

normally if you hit the y key. if this changes from solid to wireframe and the other way round, it may be z.

If you want them to split in two objects, you have to press p
