Not sure how you could do that with Windows, but you definitely can with Linux distros.

Do you mean installing Windows 7 AND Windows 8.1 on 8GB of USB 2 eMMC slugishness? I don't think you should even try that.

If you meant to have 2 install drives on one USB dongle, then there are surely some ways. I would tackle this by splitting it into 3 partitions.

 

1-MBR, contains GRUB

2-One install image here

3-Second one here

 

I am not sure how to configure GRUB to do this, but I don't expect it to be that hard.

I was wanting to have the install ISO for windows 7, and 8.1 on the same USB.  sorry didn't meant o make it confusing.
