I am in the process of educating myself on how to overclock my 980TI and I am wondering what the best benchmark program(s) are for testing your overclocks?

I have been using Unigine Valley so far...

Your best benchmark is using actual games(and maybe even trying to mix up the rendering scene a bit). I prefer Heaven as far as synthetic tests go as I find it to be the most taxing(but still within reason). Avoid Furmark.

Yeah I keep hearing that I should avoid Furmark. Seems like Valley and Heaven are the popular ones.

How long do I need to run these programs to test the overclock settings?

For formal testing, I always try to let it run through the entire benchmarks. If any artifacting is noticed, take note of it and pay attention in case any more comes up. For informal testing, well, that never ends.
