I'm currently in the process of rebuilding my rig after having clinical broke-ness (for way too long). I'm stuck deciding between two different display setups that I've been thinking about for awhile now, the first being  standard 3 way eyefinity (7950) and the second a single monitor + wall mounted t.v. Both seem to fit my needs (gaming and course work) and budget (up to $900 for displays) so I guess I'm mainly looking for advice from people with experience with similar setups (pros, cons, tips, suggestions). Thanks in advance!

Get the 3 monitors.

TVs have a resolution of 1080p [at least the majority] and you will not get a 4k TV within your budget so the size of the TV is going to be more of a con than a pro. And TVs have horrible input lag, especially for gaming.

Get 3 korean panels like the X-Star ones, 280$ each including shipping ^^ Probably the best solution.

eyefinity will mean much lower fps. but also much more screen estate. So if you're using it for gaming and you want a smooth experience a TV (make sure you put it in game mode to ensure all post-processing is off) If you're going for productivity first and gaming second. Aswell as the ability to game in eyefinity (just lower fps) go with 3 way eyefinity.

I personally would go with 3 screens in eyefinity. Once you've had more than 1 it is very very difficult to cut down.

i would go for one display for gaming and have 2 other dispalys flanking it for productivity

Desktop -  i5 4670k, GTX 770, Maximums VI Hero, 2X Kingston Hyper X 3k in raid zero.

Laptop - Lenovo X230 Intel 535 480GB, 16GB Gskill memory, Classic Keyboard Mod, Triple USB 3.0 Express Card.

Do not game on a TV.  That's what consoles are for.  You could go eyefinity but a 7950 won't be enough.  I would recommend 1440p really.  I've wasted soooo many hours finding eyefinity game fixes.

i7 4770k, 16GB Corsair Vengeance

Gigabyte z87, Phanteks Enthoo Primo

7970
